Knödel (dumplings) of all kinds, play an important part in Tyrolean cuisine. From bacon dumplings, to spinach dumplings, to cheese dumplings made using the traditional Tyrolean Graukäse, they can be either eaten on their own, added to soup, or served with other dishes. Other specialities include : Tyrolean Gröstl (fried meat, potatoes and onion), Tirtl and Schlutzkrapfen (stuffed ravioli). Krapfen and Kiachl (Küchl), deep-fried dough balls, are quite popular, as is the sweet Brandenberger Prügeltorte. The so-called Melchermuas is prepared in mountain huts and served in a traditional cast-iron pan.
